Challenges for a Chef!

Over the past years CryoCooking™ has evolved from merely a presentation gadget to a new and accepted way of food preparation. CryoCooking™ lets you do things you cannot accomplish in any other way. It has become an essential part of the molecular kitchen.

Cooking with liquid nitrogen finds application in a growing list of food preparations. Below are a few very basic recipes that do not require special education or skills to prepare.
- Preparation of nitro-meringues
- Making powdered ice using a spray gun
- Coating soft products with thin layers of jelly by repeated quick freezing with nitrogen
- Creating Ice-cream pearls from a fruit coulis
- Preparing fresh ice sorbet at the dinner table
